Vegan Chocolate Chip Cookies Recipe

Let’s be honest, vegan or not, chocolate chip cookies are right at the top of everyone’s list of favourite snacks and desserts. They’re fun to make, tasty and, if baked with some well-chosen ingredients, can be healthy as well. Here’s a recipe that you can try – vegan or not – to satisfy your sweet cravings and give yourself a healthy indulgence:

Here’s what you’ll need:

  • 1/2 cup Nutriseed Organic Virgin Coconut Oil
  • 1 and 1/4 cups Nutriseed Organic Coconut Sugar
  • 2 teaspoons Nutriseed Vanilla Powder
  • 1/4 cup coconut or almond milk
  • 1/4 cup unsweetened applesauce
  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon Nutriseed Himalayan Rock Salt
  • 2 cups chocolate chips

Directions: 

  • Preheat the oven to 375 degrees (F). Then line a large baking sheet with parchment paper and set aside
  • In a large bowl, whisk together the Nutriseed Organic Virgin Coconut Oil, Nutriseed Organic Coconut Sugar, and Nutriseed Vanilla Powder, beating until well-combined
  • Add the milk and applesauce and whisk until well-combined then set aside
  • In a separate bowl combine the flour, baking soda, and Nutriseed Himalayan Rock Salt. Whisk well to combine
  • Add the dry ingredients into the wet mixture and, using a wooden spoon or very sturdy spatula, stir until all of the ingredients are combined
  • Fold the chocolate chips in
  • Scoop three tablespoon-sized mounds of dough onto the prepared cookie sheet, leaving a few inches between each cookie to allow for spreading
  • Bake for 9 to 10 minutes, or until the edges are golden and the centres have set
  • Press the remaining chocolate chips on top of the warm cookie
  • Cool the cookies on the baking sheet for 15 minutes before transferring them to a cooling rack
  • Transfer to a serving tray and enjoy!

 

If the dough appears too sticky, add a little more flour, one tablespoon at a time. If the dough appears too dry, add a tablespoon of milk.
