Behold… The perfect lunch-time snack!

Salads and sarnis not taking your fancy as we get through Winter? Well luckily for you, we’re sharing a gem of a delicious and nutritional lunch time snack (and we believe its probably one of the best you will ever find!). These tasty mini quiches are full of nutritious, healthy ingredients (including our protein packed Flaxseed), and in bite-sized mini tarts they are perfect to pop in your bag and get you through your work day.
Here is what you are going to need:
For the crust:
-1 tbsp. Milk
-1 tbsp. Olive Oil
-1 tsp. Oregano, dried
-Pinch of Salt
For the Filling:
-1 tsp. Garlic powder
-2 chopped Red Onions, chopped
-½ tsp. Black Pepper, ground
-50g Spinach Leaves
-1/2 cup grated Cheddar Cheese
You ready? Let's go!
-Pre-heat the oven to 180°C.
-Spray a little oil into each section of a muffin tray.
-In a blender mix all of the crust ingredients and then press it down into the muffin tray.
-Bake for 15 minutes.
-In your blender, whisk together the eggs and milk from the filling. Then add the garlic powder and black pepper.
-Pour this mixture into a bowl and stir in the onion, spinach, and cheese.
-Pour the filling mixture into the crusts, and return to the oven for 20 minutes, or until the egg is set.
